    Arpa sehriye corbasi (bird's tongue soup)

      


    Ingredients for 6 persons :

    • olive oil
    • bird tongues
    • tomato paste
    • hot water
    • black pepper
    • the paprika
    • salt
    • vegetable or chicken broth
    • you parsley





    Preparation steps

    1. Heat the olive oil in a pot.
    2. Add the birds' tongues and a teaspoon of tomato paste.
    3. Add the hot water mixed beforehand with the broth (vegetable for a vegan soup, otherwise a chicken broth).
    4. Add the spices (black pepper, paprika, a little salt).
    5. Cook for 15 to 20 minutes over medium heat.
    6. Once the soup is ready, add finely chopped curly parsley.
    7. It is also possible to add precooked diced chicken or meat, or even peas.
