
Ingredients for 4 persons :
• 3 chicken breasts
• 4 shallots
• 2 cloves garlic
• ½ tsp. turmeric
• 2 bird peppers
• 1 knob of ginger
• 1 lemongrass stick
• 3 tbsp. tablespoon sweet soy sauce
• the juice of 1 combawa
• 20 cl of coconut milk
• 250 g plain peanuts
• olive oil

Preparation steps
- Remove the seeds from the peppers. Crush the peppers with the chopped lemongrass, peeled and grated ginger and garlic. Fry the mixture in the pan in 1 tbsp. tablespoons of olive oil. Reserve this marinade.
- Blend the peanuts to form a paste. Add it to the pan with the coconut milk and soy sauce. Mix everything. Cook for 45 minutes over low heat. Add the combawa juice at the last moment.
- Cut the chicken into very small 1 cm pieces, thread them on small skewers next to each other. Leave to marinate for 3 hours in the spicy mixture.
- Brown the skewers on a grill or in a pan. Serve immediately with the satay sauce.
