1 beautiful cucumber
1 piece of parmesan
Cherry tomatoes (a few)
3 tbsp. tablespoons chopped chives
1 spring onion
4 tbsp. tablespoon Walnut kernels
4 tbsp. tablespoons olive oil
1 tbsp. balsamic vinegar

- Peel the cucumber (1 strip out of 2) and cut them in 2 lengthwise. Using a small spoon, remove the seeds inside then cut the halves into strips. Cut the cherry tomatoes in 2. Peel and finely chop the onion. Cut the parmesan into shavings using a vegetable peeler.
- In a bowl, mix the olive oil, vinegar, salt and pepper. Add all the ingredients and mix thoroughly before serving with your leftover cold chicken.
