    Preparation steps

    1. Cut the stem of the artichoke at its base. Eliminate the first or the first 2 rows of outer leaves of the artichoke: they are less tender than the inner leaves, even after cooking.
    2. Place the artichoke point up in a steamer basket over a pot of boiling water (or in a steamer). Close with a lid, and cook for 50 to 55 minutes. If the artichoke is very small (poivrade artichoke), cooking will only take 30 minutes.
    3. Serve the artichoke with a vinaigrette or mousseline sauce. Separate the leaves one by one and dip them in the sauce before eating them.
