      Ingredients for 4 persons :

      • 4 soft wheat tortillas
      • 1 small shoulder of lamb (1 kg)
      • 200g Greek yogurt
      • 2 tomatoes
      • 1 romaine lettuce
      • 1 onion
      • 2 spring onions
      • 2 cloves garlic
      • 1 lemon
      • 4 sprigs of thyme
      • 1 bunch of flat-leaf parsley
      • 3 tbsp. tablespoon olive oil
      • 1 green chilli (optional)
      • ground chilli
      • salt pepper

      Preparation steps

      1. Mix the peeled and chopped onion with the pressed garlic, the crumbled thyme, 1 tbsp. tablespoon oil, juice of 1/2 lemon, 2 pinches of chilli and pepper.
      2. Make incisions in the lamb shoulder and coat it with the marinade. Refrigerate at least 3 hours.
      3. Take the shoulder out of the refrigerator at least 1 hour before cooking. Salt and put it in a dish. Bake in the preheated oven th.7 (210°C), 50 min. Bone and shred the flesh.
      4. Mix the Greek yogurt with a squeeze of lemon juice, the rest of the olive oil, the minced spring onions, chopped parsley, salt and pepper.
      5. Reheat the meat under the broiler and the tortillas in the microwave. Garnish them with lettuce, tomatoes, parsley, chopped pepper, meat and sauce.
